Sydney served this at our last bunco... everyone loved it:
Layer:
1 1/2c hummus
1c chopped cucumber
1c chopped tomato
1/2c kalamata olive
1/2c feta
1/3c scallion
cover w/ 1T lemon, 1t italian seasoning, 3 cloves garlic minced
serve w/ veggies/chips
Some ideas for easy, simple, weekday meals. Mostly veg - trying to incorporate farmer's market fare.

Raw Granola Balls
Made this recipe last night - YUM!
- 1 1/3 cups rolled oats
- 2/3 cup almond butter (Justin's Vanilla)
- 1/4 cup maple syrup
- 2/3 cup mini chocolate chips (or dried fruit)
- 2/3 cup chopped pecans (or another nut)
- 1/2 teaspoon cinnamon
Mix, roll into balls, place on parchment, refrigerate... Devour!

Cole Slaw
I just created this cole slaw tonight - YUM! Great with Mexican or Fish tacos:
- Cabbage (red and green) chopped finely
- Lime zest and lime juice
- Plain greek yogurt
- Salt & pepper to taste
