This is a great low calorie salad - but still delish and easy to embellish:

- Whatever Vegetables on hand
- 1/2 Diced apple
Dressing:
1t hummus
splash of water
*optional: (fresh lemon juice, spices)
Toppings: (optional)

Best Salad Ever
1-2 heads Romaine
top with this combo:
shredded purple cabbage
shredded carrot
toasted chopped walnuts
blue cheese crumble
(a little evoo/lemon or Newman's)
Grilled chicken, diced (with either soy/mayo or soy/ginger dressing) - heated
Optional:
Kalamata
Avocado

Blue Heaven Summer Salad... Refreshing
Mix the following... serve with lemon and olive oil or something like Newman's Own Italian. Add a glass of sparkling water with raspberries for fun!
- Baby greens
- Pecans (toasted if you have time)
- Blue cheese
- Blueberries (so unexpectedly yummy!)
- Avocado
- A warm lightly scrambled egg or hard boiled

Greek App, light dinner fare
Sydney served this at our last bunco... everyone loved it:
Layer:
1 1/2c hummus
1c chopped cucumber
1c chopped tomato
1/2c kalamata olive
1/2c feta
1/3c scallion
cover w/ 1T lemon, 1t italian seasoning, 3 cloves garlic minced
serve w/ veggies/chips

Raw Granola Balls
Made this recipe last night - YUM!
- 1 1/3 cups rolled oats
- 2/3 cup almond butter (Justin's Vanilla)
- 1/4 cup maple syrup
- 2/3 cup mini chocolate chips (or dried fruit)
- 2/3 cup chopped pecans (or another nut)
- 1/2 teaspoon cinnamon
Mix, roll into balls, place on parchment, refrigerate... Devour!

Cole Slaw
I just created this cole slaw tonight - YUM! Great with Mexican or Fish tacos:
- Cabbage (red and green) chopped finely
- Lime zest and lime juice
- Plain greek yogurt
- Salt & pepper to taste
