A touch of India

This is a super easy dinner - A riff off of one of Arti Party's dishes. It's yummy but not overwhelmingly spicy. You can also make it with whatever you have in the kitchen.

Veggies (whatever you have on hand - I used shallot, celery, carrot, gourmet wild mushrooms and zucchini)
Whole Grain (could be previously cooked - e.g. wild rice, quinoa, steel cut oats, etc.)
Garlic, EVOO
Feta cheese (Greek)
1/2 t cumin
1 T coriander
handful fresh cilantro, parsley or mint

Mince Garlic. Fry in EVOO for 20-30 seconds. Add veggies. Cook down till soft. Sprinkle with spices - cook till done ~ 5-10 min medium heat.
Meanwhile broil grain with crumbled feta on top. Once hot transfer to plate.
Spoon veggies on top. Sprinkle with herbs. Serve. Enjoy.
